A sponsor sent me a check (or cheque as we say here in Canada) for $111.56 yesterday. I'd forgotten about the account as it was duplicate of another. I like nice surprises. |bananna|

It's just another day in the neighborhood...

Made another huge pot of chili yesterday along with tofu baked with a lemon rosemary marinade.

3 pounds firm tofu, rinsed, patted dry, and cut into 3/8 inch thick slices.
18 tablespoons lemon juice
4 tablespoon balsamic vinegar
6 tablespoons Soy Sauce
1 ounce minced fresh rosemary
1 teaspoon ground white pepper
5 tablespoons olive oil

Preheat oven to 350 F.

In a blender mix all the ingredients for the marinade.
Pour the marinade into a baking pan
Slice the tofu into 3/8 inch thick slices and place in a single layer in a baking dish. Flip each piece of tofu over so that the marinade coats each side.

Bake for 30 to 40 minutes, or until the marinade has been absorbed.

I know what we will be eating for the next few days. :D

Still trying to get an appointment with a vascular surgeon. My doctor gave up trying to get me in his first recommendation and is now trying to find one that will actually see me before in a reasonable time frame. Other than trying to find someone to cut and dice me just anther mundane day of the usual mundane stuff.

I did get almost everything taken care of yesterday, except switching over the insurance. they had to call my previous agent to send over all the information. That should be taken care of today. So today I will be busy changing all my contact info for my sponsors....don't want to miss any checks.

Wow Cleo, I like tofu, but don't think I could eat that much in a week. Sounds good though, I'll have to try a smaller batch of that. I've got Jim to eat flame grilled flavored garden burgers, I need to marinade up some tofu, and sneak it in stir fry...then tell him what it is, lol. Good luck on finding the surgeon.

I cook in bulk so that Christy has lunches for the week, sometimes dinners too when she has to work late. She mixes up what I cook with different items.

well it's been a while since I posted in here! I guess I ended up taking most of the summer off, haven't been doing much what with the kids here, my mom here, etc etc etc. but now with only a couple of weeks to go I'm trying to get organized and back into subbing. So updating my lists, my LL and all that so I can get my routine going again. Fun stuff!

I'm sitting at my gf's laptop again since my computer on which I just installed Vista is now doing "Installing updates 40 of 80". It's been at it for 2.5 hours now...

Hello. Wow that day just got away from myself. I still haven't eaten dinner. ugh. It's late. Didn't get lunch until 2:30ish though. So I guess it makes sense. :P

Going to mess with scripts while watching some shows here in bit. Maybe if I'm feeling inspired I'll actually get to redoing some templates too.
