I think Raw Alex said it best. You want as many people as possible to see your site correctly, so 800 it is until that %age drops down a great deal. I browse at 1024, and it seems the majority of surfers do, by the numbers here and my own stats, and sites set at 800 dont look too bad at all at that resolution.
