"The Sauce"

1 bag dried chilis (choose variety to match your taste, hot-medium-mild)
1 finely chopped habanero chili (optional)
1 20 oz. bottle ketchup
1 pint Jack Daniels Tennesee Whiskey
1-1/2 tsp Liquid Smoke
1 large onion, chopped
1 large carrot, diced
1 head garlic, peeled and chopped
1 tbsp toasted cumin
1 tbsp black pepper
1 tbsp cayenne pepper
2 tsp salt
1-1/2 tbsp brown sugar (more sugar with hot chilis, less with mild)
1 cup white wine
1 cup apple cider vinegar

Remove the tops from the chilis and shake out as many of the seeds
as possible. Caramelize the onions, garlic, and carrots in a large
sauce pan. Add the remaining ingredients and simmer uncovered for
90 minutes. Use a hand blender to reduce the remaining larger pieces
to about 1/8" bits. Simmer for another 90 minutes. If sauce is still
a bit thin add more ketchup. Allow to cool then store in glass
bottles and refrigerate.
USE SPARINGLY, DO NOT SPILL ON YOUR CLOTHES!
