I finally figured it out... er, or my super-brilliant honey did...
Sometimes you cannot see the forest for the trees... in the individual archives template, we just added font color tags to each line; name, email, comments, etc. Now I have nice white text! Woo hoo!
Just posting this in case any of the few other MT users ever has that problem!
