In the bottom of a large bowl, mash the roasted garlic and 2 tablespoons of olive oil to make a paste. Add 1 teaspoon salt and 1 teaspoon pepper, add the vinegar and whisk to combine. Add the herbs and pour over the vegetables. Sprinkly on the grated cheese.
