Server stats are programs that run on the server level and keep track of traffic and stuff. I believe the two most popular programs are AWStats and Webalizer. Your host probably already has them set up, so all you have to do is find out how to view the information. If not, then contact support for your host and talk to them about setting up something like that.

Third party tracking programs use java, or javascript or something (I still don't know the difference), on the page. Many TGP's and Link Lists check for the presence of this code and won't accept submissions from sites which use it. Server stats don't require code on individual pages.
