Cuban black beans cooked with ham hock, chopped onion, garlic, Anaheim chile pepper, bay leaves, oregano, red wine, red wine vinegar and cumin. Cooked for 4 hours.
Tropical salsa: diced mango, diced avocado, diced pineapple, minced red onion, minced red bell pepper, choppped cilantro, lime juice, orange juice, minced jalapeno and minced garlic.
