There are a few sites that submitting early makes a difference for. Thumbzilla, for example, closes the submit form once it's reached it's max number of submissions. Try submitting after dinner & the form will be closed.
But like busty1 said, it's not worth disrupting your life over. If it's just a matter of what to do first, might as well submit & then build new galleries in the afternoon to submit the next day.
