At 1024x768 on a 21" monitor 72 pixels, Mac's native resolution, is very close to one real inch. So one inch on screen is one inch of paper. This is most helpful when designing stuff for the real world like print production and design which is what I did for many years.
It is also very easy on my eyes and with two monitors there is still lots of room for all my pallets.
Mac's also have a much wider gamma, closer to print output, so I usually design a bit light so that when the gamma gets compressed on a Windows machine it will not look too dark.
