I am going to try developing some Adult games, but i don't know what the will be the best choice:

Flash games seem to work the best between browsers and platforms.

Definately flash...only decent use for java nowadays is to add web functionality that normal security settings on a browser would prevent...but flash is much more portable...loads faster...tends to be less resource intensive and is signifcantly more stable.
