Didn't think of this in time to edit my post but I just thought of a way to make that healthy. Instead of Italian sausage, cook some spinach, drain well, mix in cream cheese, cheddar cheese and an egg for a binder. Spread that on the bacon and roll up into a log. Tie the ends with butcher's twine to keep the filling in, then smoke. Health food!
