Option 1 for sure

1 email, 1 submitter name (preferably 'tigermom' for recognition purposes), for every single submit regardless of the domain you use and you will be fine

Multi-submitters usually use free email addy's or different addy's for different domains. You need to learn how to fully utilize your server stats and that's it. No need to waste time unless you want to
