As you will have heard, the PR on the toolbar is way out of date and a poor metric to use... PR is in constant flux, don't worry about it. Just about everyone went down in the last PR update across the board. Also, real PR (used in serp calculations) is a logarithmic scale not a linear one, but it is converted to the linear 1-10 scale for display on the toolbar. If your old cat pages were a high 1 and a low 3 respectively, then a few more recips in the cats with few listings means more than a few more recips in the cats with many listings. After the last toolbar PR update, the real PR of your cats could have all been within the range that is displayed as "2" on the toolbar. There is also a natural flattening effect with even internal linking. Google could also change the cut off points in terms of real PR that are displayed as the 1-10 points on the toolbar.
