Last I'd heard was 5, but make sure to mix em up! Meaning 5 different niches/categories/sponsors/templates. If you're going to try that many...they better ALL look entirely unique.
As to Gustavo's question, I think you'd be fine with 1 free site and 1 gallery. But keeping them unique would still be necessary
