Simon's and Emmanuelle's posts illustrate what I said before. If (for example) asses don't turn you on, then don't do that niche. If Simon were to try it it would be a failure. But if you are turned on by asses, then there is a lot of money to be made there. On the other hand, something that turns Simon on, and that he would make a fortune at, would fail if an ass fan tried it.
As to the comment "The girl's willing to be in porn. You really gonna not take shots of her tits?" I can't speak for tits/ass shots, but if I were doing a photoshoot of two women wrestling (one of my turn ons) and they suggested doing some lesbian stuff, my thought would be "I am paying for wrestling, wrestling is hard to get.
