About once a month I open a shell and tarball my home directories. I have crontabs set up to do MySQL dumps into a non public directory so it gets tared as well.
I only keep a small part of each domain, the part that I'm working on, locally since much of what I have on the server will never be worked on again.
If I need something old I can just extract it from one of my tarballs.
