Hugh, welcome to GG&J, you should introduce yourself in the New to GG&J in May thread on the board.
But back to your question. When youre just starting out it seems it takes forever to everything including galleries. Youll get quicker and better with time.
Myself I take about 1/2 an hour from grabbing images to adding linking codes to FTP'ing the gallery to the server. Thats not using a template for the same sponsor's site. When using a template I can probaly knock out 2 in that time.
