Morning all. (Well it still is here

) Working through my first submit of the day. I made scrambled eggs with mushrooms, green onions, and spinach for breakfast, the first time I've had eggs in about 6 years. Plus had some
Veggie Bacon Strips, which were excellent.

Not sure why I never tried those earlier.
Did a Nutritional Typing test last week, and realized I wasn't getting enough protein in my diet. I can only eat so much tofu, soy milk, soy protein powder, and cheese, so added eggs back in.
Cleo, any good suggestions on other veggy protein sources? No way I will add meat/chicken/fish back in, but maybe there are some good veggie ones I'm missing.
