Edit template-functions-general.php. Around line 139 you find

function wp_title($sep = '»', $display = true) {

Edit it to look like this

function wp_title($sep = '', $display = true) {

No more pesky >>

Putting a space in may solve your other problem so it would look like this

function wp_title($sep = ' ', $display = true) {
