Ok...OK..Im busted, we haven't started to maranade the bird yet and really we don't.
Actually I cook the bird on a very, very low heat over mesquite...so very low you won't see a change for about 1.5 hours[basting with vinegar and sweet pickle juice...constantly]
After about 4.5 hours I start to baste with a receipe from my late uncle....southern style and slow for another 1-2 hours and finally....lip smacking finger sticking good chicken......
Oh BTW I should have mentioned that we would have never known about greenguy and Jim if it wasn't for Venturi......he reffered us over
