It surely does affect the speed and performance of your server by having a lot of subdomains, as the server software needs to memorize each one and categorize each one with various information about them...also when called upon (by visitors going from one to the other) the server (in my experience the Apache web server) has to keep track of the various subdomains. But it really shouldn't cause too many problems unless you have like 150+ subdomains. But all in all your server should be fine regardless...unless you have thousands. Think of the categorizing scheme that happens with .htaccess files...these files can get quite large by adding directories...and each time the server is called upon it has to execute that file to find the correct directory to send the visitor to. ...hope that helped lol.
