While I understand & agree with what you're saying, I think most people think of a black guy & a white woman when they here "interracial"

If I did put all the sites that have Asian, Latina, Indian, etc women with white men into their own interracial category, I'd have some very empty pages.

This is a tough one as generally when I think interracial it's black guy with white girl and I think a lot of people view that category as that. When I'm reviewing generally I'll only put black guy / white woman in the interracial category...then the rest of the interracial stuff goes in the categories of Black / Asian / Indian, etc, etc, etc

I know it's not a perfect system, but it can become a nightmare if you make categories up for every possible coupling.
