Gonna fire up the charcoal grill this afternoon and grill some zucchini, squash, red, yellow and orange bell peppers, portabella shrooms, green beans and red onion slices. Looks like a veggie day here. Yum!
Hang in there! You are doing great.. it is working just a bit slow yet.
Mmmm I love the charcoal grill and your menu... can I visit you?

PS What spice do you use for squash e.g. ?

Extra virgin olive oil, salt and pepper on all the veggies. Grill the veggies and when done make this sauce:

1 head of garlic, roasted
1/4 cup sherry vinegar
3 tablespoons minced fresh basil leaves
2 tablespoons minced fresh parsley leaves
1 tablespoon chopped fresh thyme leaves
(I'll probably throw in some minced garlic too)
Freshly grated Parmesan

In the bottom of a large bowl, mash the roasted garlic and 2 tablespoons of olive oil to make a paste. Add 1 teaspoon salt and 1 teaspoon pepper, add the vinegar and whisk to combine. Add the herbs and pour over the vegetables. Sprinkly on the grated cheese.

(This is one of Emeril Lagasse's recipes and I take no credit for authoring it)
