I have stayed away from salt since I found out about my high blood pressure. But with Thanksgiving and Turkey, you just can't worry about it.
I started it this morning with a 32 pound turkey, bottle of wine, onions, spices and 10 quarts of water. It is nice to have an extra empty refrigerator.

I really don't know how you would do it without one.
