Amatuer Video Legal Question

Hello everyone,
A friend and I have been messing around with creating an adult website and are considering shooting some video.
We have friends (and friends of friends) that are willing to participate in the action. We would like to sell the videos in DVD format, possibly as digital media, or even start up a full blown adult pay site.
The people that want to be the 'stars' of the shoots are not asking for any compensation for helping out. Some do not care if they are shown on video, while others want to remain anonymous.
What kind of releases/legal forms would we need to cover our butts in this case?
Lets say we do actually start making money with the material and someone goes apeshit and demands some compensation. No, I'm not cheap, just curious lol. Or someone decides a year later they do not want the video with them in it circulated. How can we protect ourselves?

BTW, if it makes a difference legally, we are in the lovely state of New Hampshire.
