Because of the weight of the food you eat and the water you drink. At night, you tend to sweat off / metabolize some of the water and food, so you almost always weigh less 1st thing in the morning. Personally, I have a 32 oz bottle I use for water and I can drink that at a meal....that is 2lbs right there, lol.
