At some point though it's high time to tell people still using IE 5.5 to bugger off and get themselves a new browser.

Agreed, I will be sure the public release will include the XHTML feature.

I am still not sure how to handle the images, should I distribute them in a zip?
not sure hotlinking is an option..

If they have images, sure, why not; if you do a website where people can get their recips, then you could auto-generate a zip with all the required images... Archive::Zip is your friend
