It's just another day in the neighborhood...
Made another huge pot of chili yesterday along with tofu baked with a lemon rosemary marinade. ![]() 3 pounds firm tofu, rinsed, patted dry, and cut into 3/8 inch thick slices. 18 tablespoons lemon juice 4 tablespoon balsamic vinegar 6 tablespoons Soy Sauce 1 ounce minced fresh rosemary 1 teaspoon ground white pepper 5 tablespoons olive oil Preheat oven to 350 F. In a blender mix all the ingredients for the marinade. Pour the marinade into a baking pan Slice the tofu into 3/8 inch thick slices and place in a single layer in a baking dish. Flip each piece of tofu over so that the marinade coats each side. Bake for 30 to 40 minutes, or until the marinade has been absorbed. I know what we will be eating for the next few days. ![]() Still trying to get an appointment with a vascular surgeon. My doctor gave up trying to get me in his first recommendation and is now trying to find one that will actually see me before in a reasonable time frame. Other than trying to find someone to cut and dice me just anther mundane day of the usual mundane stuff. |

Get me!
|
Good morning everyone!
I did get almost everything taken care of yesterday, except switching over the insurance. they had to call my previous agent to send over all the information. That should be taken care of today. So today I will be busy changing all my contact info for my sponsors....don't want to miss any checks. Have a good one! |
