Good morning - just sitting outside celebrating my birthday watching the boats on the St Clair River and looking at nice little houses across the river in Canada - have a fine day

Morning all. Tried a new recipe last night which turned out awesome

Make mashed potatoes but keep them a little dry. Add 1 shallot finely chopped, 1T. horseradish, 1 tsp. Dijon mustard, 1/2 tsp. garlic salt and a little pepper. Take Mahi Mahi filets and smear on a little mayonnaise (I guess this is a binder to keep the potato mixture in place) Spread a thick layer of potatoes on the flesh side of each filet. Pan fry in a little olive oil and butter on both sides until done. WOW! Was yummy! Veal steaks are on the menu for tonight with Cuban black beans and rice.
